The wellness trend making national headlines hits the Rose City Wednesday when steaming cups of savory bone broth will be on tap at the popular JoLa Café at 5915 SW Corbett Ave. The broth is the newest item from another local favorite, Pacific Foods, a family-owned natural foods company introducing bone broth alongside its vast line-up of soups, broths and non-dairy beverages in Whole Foods Markets and other grocers nationwide.

Bone broth, considered a health and wellness tonic, is quickly gaining adoption as fans of the popular paleo diet and others recognize the ancient beverage. Now alongside JoLa’s menu of artfully crafted lattes and premium coffees, will be a variety of Pacific’s organic chicken and turkey broths ranging from 45 – 50 calories and providing 11 grams of protein in each serving.

Five flavors, all gluten-free, will be served daily on rotation ($3.75 for 10 oz.) with add-in options curated by Pacific and consulting chefs trained at The Culinary Institute of America for an aromatic and flavor boost, including:

  • ASIAN – Grated ginger with chopped garlic, scallions and soy sauce
  • CITRUS-GINGER ZING – Orange and lemon zest with grated ginger
  • COMFORT – Lightly-cooked blend of carrot, celery and onions

Much like cream, sugar and cocoa powder for coffee drinkers, a selection of complementary seasonings will be available on a self-serve bar to allow for additional customization, including smoked paprika, garam masala, nutmeg, tabasco, chili oil and sriracha.

“Bone broth is super nutritious and nourishing, but also super difficult and time intensive to make,” said JoLa co-owner Jenny Quirie. “Pacific, a local company we trust, makes it with integrity, using the highest quality ingredients and a time-honored method. They’ve made it possible for us to make bone broth accessible to everyone.”

Pacific’s organic bone broths are made in the traditional way: by slowly simmering organic chicken or turkey bones, sourced from local, pasture-raised poultry, in a classic combination of apple cider vinegar, water, onion, fresh herbs and seasonings for a full 12 hours. For those who want to sip at home, Organic Chicken (Unsalted) and Organic Turkey (Unsalted) can be purchased locally at Whole Foods Markets ($4.89 - $5.89 for 32 oz.).
